But i surely understand the value of a holy festival being celebrated by millions across world.  For all those brothers and sisters observing holy fast for the month, I am dedicating this post for you to consider when you break fasting everyday after sun set.

Here they are! The meatballs of the hour – that are, actually, not meatballs. Because they are VEGETARIAN MEATBALLS! Made without beans (we’re going rogue!) and made instead with cauliflower and brown rice and quinoa.

If you haven’t noticed, meatballs are a BIG hit in our home. I typically simmer them in a huge pot of marinara sauce and make a traditional Italian meatball recipe. However, now that temperatures are starting to cool down, I thought I would incorporate them in a big bowl of soup! I wanted to try something different and extra healthy. This turkey meatball soup is packed with tons of protein and vegetables.  Delicious and good for you, yes please!

Meatballs are a staple at our house, especially the kind made by adorable Italian grandmas! As much as we could devour a plate of those at least once a week, I thought I would bring a little eastern flavor into the mix. The base is everything you would expect in a meatball; ground beef, bread crumbs, and eggs. But I’ve spruced them up with a little quinoa, fresh serrano peppers, ginger, oranges and enough spices to make your taste buds kick!

I’m seriously-legit-for-reals not being over dramatic.That’s just not my style. This meat is so moist and flavorful with just the right amount of crisp on the outside. How do you make these bad boys? With our paleo take on this traditional dish you won’t be missing a thing, except for the bloat. It’s fresh, all from scratch and won’t leave you feeling like you need to be rolled to bed afterward. It’s an easy way to get your veggies and meat in, and your kids can even help with the zoodles which is fun to get the whole family involved in the kitchen! We make our zoodles using a spiralizer. It’s really easy with the one we have and takes little time. It has three different blades for various sizes of zoodles. You can also spiralize other veggies too! It’s fun!

Hello breakfast, meet balls. We laughed so hard over how clever we thought we were with that little play on words that we just had to put it in the post. Seriously though, these breakfast meatballs are so tasty and make for the easiest breakfast. Just make a batch of these on Sunday and then you’ll have them ready for quickly re-heating in the morning the next few days. They are packed with flavor from the bacon and sausage and they bind together well with the shredded parsnip. I eat them with spinach and sour kraut and find it to be great fuel for my mornings! Also, you just mix everything together in a bowl and then bake them for 40 minutes. Doesn’t get much easier than that!

If you’ve never had elk meat, you are really missing out. It is mild yet distinctive in flavor and an excellent source of lean protein. I like to describe it as delicious, juicy and tender. It really is at the top of the scale when it comes to wild game meat and it doesn’t take much to prepare, generally just a little salt and pepper. Luckily, we had a successful hunting trip last year and have had plenty of elk meat in the freezer to pull out when we get the craving for a flavorful steak. In addition to some amazing steaks, we also have some ground elk that we have used mostly as a ground beef substitute, either for taco meat or burgers.

One-Pot Spaghetti and Vegan Meatballs

Vegan meatballs sounds crazy and I’m not going to say that they taste like meat because it won’t be true. But they taste like falafel, which is also awesome, isn’t it? I mean, they are refreshing and nutty, full of protein and nutrients, served over one-pot whole grain spaghetti with rich marinara sauce and drizzled with lemony yoghurt dressing. It’s a perfect light spring comfort food for me.

When I say smoked, I mean that the whole meatball was smoked…to perfection! I don’t know why, but I have always thought that making meatballs is pretty fun, other than when my ground beef is super cold. These little hidden shrimp meatballs are even better, and definitely a fun one to turn the kids loose with if you dare ????

CHINESE BEEF MEATBALLS WITH HOISIN GINGER SAUCE RECIPE

Try out this Chinese Beef Meatballs with Hoisin Ginger Sauce Recipe and be the hit of the party! Perfect for any occasion, from office parties to game day to just a quick and satisfying family snack. These sweet and tangy meatballs never last long enough for leftovers, and can be kept warm in a crock pot that is set to low heat for pot lucks and special occasions. To get started you will need ground beef, Panko, garlic, sesame oil, ground ginger, an egg, hoisin sauce, rice vinegar, soy sauce and any garnish desired (we used sesame seeds and sliced green onions).

Lately these from scratch meatballs make an appearance almost weekly on our menu.  Last week I made Mini Turkey Meatballs and Easy Marinara, and froze half of the meatballs for tonight’s dinner.  Really you could add just about any sauce to transform these meatballs (think BBQ, sweet and sour, Swedish style, etc.)  And it makes a HUGE batch, so you should get at least two meals out of one recipe.

These Kung Pao Mini Meatballs are such a tasty treat.  Simple mini beef meatballs are coated in a spicy Asian sauce, perfect as a fun appetizer or served up with rice and veggies for dinner.  At our house, meatballs are always a big hit and these are no exception.  Oh, and this is a 30 minutes or less recipe – bonus! This meatball recipe happens to be Paleo and gluten free.  Although we don’t follow those diets exclusively, I still love to use almond flour in place of breadcrumbs because it’s an undetectable swap and an easy way to reduce a few extra carbs.

Meatballs are one of those things that make an awesome base. You can throw some barbecue or marinara on them or eat them plain. I personally recommend this Maple Brown Sugar BBQ Sauce I made in the last post. ???? They are also perfect for an appetizer or as a part of an entree. It’s such an easy dish to whip up for a pot luck or as hors d’oeuvres for a dinner party.

Acadiana is full of small town treasures brimming with personality and charm.  These are the quirky little stops in the road that most tourists totally miss.  I could name a few – Abbeville, Grand Coteau, Kaplan, Jeanerette – but, one of the most interesting is the town of Mamou up in Evangeline Parish. Not sure why, but Mamou has always drawn me in.  It’s a colorful little place with down-to-Earth Cajun people and that spirited joie de vivre that characterizes South Louisiana culture.  I’ve been to the Courir de Mardi Gras, that fun and funky traditional rural Cajun Mardi Gras.

You heard it right…. Its Veggie Koftas, Veggie meatballs without meat… You know why i made this attempt. My younger son is a picky and a choosy eater. He turns his face away from any snack except for one or two of his favorites. He just says ” I don like this”. This meat ball is for my non vegetarian lover son. He prefers to be a complete Carnivorous. I wanted a easy to hold meat ball which resembles and tastes like a meat ball. That is how i landed in this recipe. He loved these meat balls with a spicy tangy sauce.
